Following tradition, Barolo Mirafiore is produced by combining wines from different vineyards. The choice of vineyards can vary according to the characteristics of the vintage. The assembly takes place as soon as the malolactic fermentation is completed. The long maceration and the reduced decanting carried out during the refinement allow us to anticipate the development of tertiary aromas even before bottling.
