Cervaro della Sala is a white wine produced in Umbria through the vinification of Chardonnay and Grechetto grapes, both vinified in steel. The first vintage of Cervaro della Sala produced was 1985, introduced on the market in 1987. This wine has won numerous awards and obtained various important recognitions for the constant quality demonstrated.
The harvest of the Cervaro grapes requires particular care. The attention for the grapes also continues in the cellar, thanks to the particular structure of the same, designed to exploit the principle of gravity and therefore avoid mechanical interventions on the grapes and on the musts which by falling, after a skin maceration at 10 °C for about four hours, are placed in settling tanks where they clarify before being transferred to barriques. This is where the alcoholic fermentation takes place followed by the malolactic one. Usually in five months all the lots of Chardonnay are ready to be transferred to the tanks and blended with the Grechetto, which is instead vinified separately. After bottling, the Cervaro della Sala is aged in the bottle for at least 12 months in the historic cellars of Castello della Sala.
